    This fruitcake is a little different - it is packed with whole Brazil nuts, dates and cherries with just enough cake batter to hold it all together. Delicious!

    Makes: 1 loaf cake

    • 3/4 cup (90g) plain flour
    • 3/4 cup white sugar
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 3 cups Brazil nuts
    • 450g pitted dates
    • 1 cup maraschino cherries, drained
    • 3 eggs
    • 1 teaspoon vanilla essence

    1. Preheat oven to 150 degrees C. Grease a loaf tin.
    2. Sift the flour, white sugar, baking powder and salt together. Mix in the Brazil nuts, dates and cherries.
    3. Beat the eggs until foamy, add the vanilla and the flour mixture. Stir until just combined and pour into the prepared tin.
    4. Bake for 1 hour and 45 minutes. Store in the refrigerator, wrapped in foil.
