    This is a very simple recipe for a delicious coffee cream icing. It makes enough to fill and ice one 20cm 2 layer cake. Keep refrigerated.

    Serves: 16 

    • 2 cups (500ml) thickened cream
    • 2 tablespoons white sugar
    • 1 tablespoon instant coffee
    • 1 tablespoon boiling water

    1. Beat whipping cream and sugar together in mixing bowl until stiff. Dissolve coffee granules in boiling water. Cool. Add to whipped cream and beat in.
