    Because sometimes all you want is a basic chocolate cake with chocolate icing! This mud cake is rich beyond belief. You will love it.

    Makes: 1 cake

    • 300g butter, softened
    • 1/2 cup cocoa powder
    • 2 cups white sugar
    • 4 eggs
    • 1 1/2 cups (185g) plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 1/2 cups walnuts, diced
    • 2 teaspoons vanilla essence
    • 1/2 cup (125ml) milk
    • 3 cups icing sugar
    • 1/3 cup cocoa powder

    1. Preheat oven to 180 degrees C. Lightly grease one 20x30cm cake tin.
    2. In a large saucepan over low heat, melt 250g of the butter and add the cocoa. Stir well until smooth. Remove from heat and add white sugar, beat well. Beat in eggs one at a time.
    3. Combine flour, baking powder and salt and stir into the egg mixture. Stir in the chopped nuts and 1 teaspoon of the vanilla. Pour batter into the prepared tin.
    4. Bake for 35 to 45 minutes. Let cool a little.
    5. Beat together the remaining 60g butter, 1/3 cup cocoa, 1 teaspoon vanilla, the milk and the icing sugar. Once well combined spoon over the still warm cake.
