Easy Shoestring Tuna Salad

    This is a very quick and simple tuna salad and hard to beat for flavour. The addition of crunchy shoestring chips is what makes it special.

    Serves: 5 

    • 185g tinned tuna, drained
    • 1 cup grated carrot
    • 1 cup diced celery
    • 1/4 cup minced onion
    • 3/4 cup mayonnaise, or to taste
    • 125g shoestring chips, baked

    1. Break the tuna apart in a bowl. Add the carrot, celery, onion and mayonnaise; stir to mix. Fold in the shoestring chips just before serving.

    This was very tasty. I had some shoestring potatoes that were sent over from Canada in a snack trade just itching for a recipe like this. And you know, my kids freaking loved it! I added a little chopped garlic dill to it. Kids ate theirs on bread, I ate mine alone. (Mom's cutting back on carbs, you know.)
