Brown Sugar Maple Icing

    This icing takes a little more trouble to make but is well worth it. Brown sugar, maple syrup (genuine if possible!) and walnuts are a great combination.

    Serves: 12 

    • 2 egg whites
    • 1 1/4 cups (200g) packed brown sugar
    • 1/4 cup (85ml) maple syrup
    • 3 tablespoons cold water
    • 1/8 teaspoon cream of tartar
    • 1/4 cup chopped walnuts

    1. Place egg whites, brown sugar, maple syrup, water and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until icing has a good spreading consistency and will stand in peaks. Remove from heat.
    2. Ice cake. Sprinkle walnuts on top.

    This could be better - it didn't thicken at all, so could only be drizzled over the cake as a very sweet sauce.  -  30 Dec 2015


    Excellent recipe, very light and fluffy with lots of maple flavor! Substituted the cream of tartar for vinegar (3X amt of tartar amt) since I did not have any and was still great! Loved it!  -  21 Apr 2009  (Review from Allrecipes USA and Canada)


    This was good but a little sticky rather than peaky. I doubled the cream of tarter and that helped it peak more. I also removed it from the double boiler once everything was thickening up.
