Easy Butter and Almond Biscuits

    This is a very simple recipe for a German-style butter biscuit with almonds and jam filling. They are very good and easy to make.

    Serves: 36 

    • 1 1/4 cups (155g) plain flour
    • 220g butter
    • 2/3 cup ground almonds
    • 1/2 cup (125g) white sugar
    • 2 teaspoons vanilla essence
    • 1 egg
    • 5 tablespoons any flavour fruit jam

    1. Mix flour and butter or margarine.
    2. Separate egg. Add almonds, sugar, vanilla and egg yolk to the flour mixture. Mix to dough consistency with hands.
    3. Cover and chill dough for 1 hour.
    4. Roll and cut into desired shapes. Brush with egg white.
    5. Bake at 180 degrees C until done. Let cool. Spread jam on half of the biscuits and top with other half.

    Much better rolled thin & eaten straight from the refrigerator. Easy enough my 17 year old son made them himself for his German class Christmas party.
