Spiral Pasta Salad with Ham and Tomatoes

    This is a lovely pasta salad side dish which can be made with leftover ham. You can also make it the night before but don't add the tomatoes until ready to serve.

    Serves: 6 

    • 2 cups spiral pasta (fusilli)
    • 1 cup mayonnaise
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup parsley, chopped
    • 2 tablespoons milk
    • 1 clove garlic, minced
    • 1 1/2 cups diced ham
    • 2 cups halved cherry tomatoes

    1. Cook pasta in a large saucepan of boiling water until al dente. Drain, rinse and drain once more. Set aside.
    2. In a large bowl, combine mayonnaise, grated cheese, parsley, milk and garlic. Mix well. Stir in pasta, ham and tomatoes. Chill several hours.

    VERY GOOD. i omitted the tomato, added 1/4 cup each of finely chopped red and yellow peppers. added diced pepperoni, quartered black olives and at the very end i added 1/2 cup of shredded colby cheese. had to add extra 2 TBS of milk the second day fo refresh.  -  24 Mar 2008  (Review from Allrecipes USA and Canada)
