Quick Tomato Chutney

    This is a quick and flavourful African-style tomato chutney. Great with meat dishes and rice or bread.

    Serves: 6 

    • 675g cherry tomatoes
    • 1 small onion, chopped
    • 1 spring onion, chopped
    • small handful chopped fresh coriander
    • 2 green chillies, chopped
    • salt to taste
    • 1 teaspoon lemon juice, or to taste

    1. Place cherry tomatoes in a medium saucepan. Add just enough water to cover the bottom of the pan. Bring to the boil over medium high heat and let cook until tomatoes are soft and broken.
    2. In a medium bowl, mix together the onion, spring onion, coriander and chillies. Add hot cooked tomatoes and mix well. Season with salt, pepper and lemon juice to taste.

    This the African take on salsa - pretty good recipe. I don't care for the tough skins of cooked cherry tomatoes so I used romas and peeled them before cooking then down.
