    This is a recipe for a smallish batch of choc chip biscuits. It works best with these measurements so it's best if you don't double it. Light and chewy!

    Makes: 24 biscuits

    • 3/4 cup packed brown sugar
    • 1/4 cup white sugar
    • 90g butter
    • 1/2 teaspoon vanilla essence
    • 1 egg white
    • 3 tablespoons water
    • 1 1/2 cups (185g) plain flour
    • 3/4 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 1/2 cup dark chocolate chips

    1. Preheat oven to 180 degrees C.
    2. In a medium bowl, cream the butter with the brown and white sugars. Stir in the vanilla, egg white and water. Sift together the flour, bicarb soda and salt; stir into the creamed mixture. Mix in the chocolate chips.
    3. Drop dough by heaping spoonfuls onto ungreased baking trays. Bake for 8 to 10 minutes in the preheated oven. Allow biscuits to cool for 1 minute on baking trays before transferring to wire racks to cool completely.
