Choc Chip Cookies in a Jar

    If you've never tried this before, choc chip cookies mix in a jar make the perfect food gift. They are also great for fetes and cake stalls.

    Ingredients
    Makes: 24 cookies

    • 1 2/3 cups plain flour
    • 3/4 teaspoon bicarb soda
    • 1/2 cup white sugar
    • 2 cups dark chocolate chips
    • 1/2 cup packed brown sugar

    Directions
    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Combine the flour, bicarb soda, white sugar and the chocolate chips. Place 1/2 of the mixture in a clean litre sized glass jar and pack firmly. Place the brown sugar on top, again packing firmly. Place the remaining flour mixture on top of the sugar. Cover with a lid.
    2. Attach an index card with the following directions: Empty contents of jar into a large bowl. In separate bowl combine 185g butter, 1 1/2 eggs and 1 teaspoon vanilla. Beat until creamy. Add to dry mixture. Drop by tablespoonful onto an ungreased baking tray and bake in a preheated 190 degrees C oven for 8 to 10 minutes.

    This recipe won first place in our county fair. My son submitted it and it won! We increased the flour by 1/4 cup (to make 2 cups of flour total). We used two eggs (how does one get a half of an egg??)and we used a layer of white chips and swirled choc/white chips. It all fits in the jar if you pack it in well.     This recipe is super easy to put together and are probably the best chocolate chip cookies I have ever tasted. They are a little crispy on the outside but soft and chewy on the inside. I increased the flour to 2 cups and changed to 2 eggs and decreased the chocolate chips to 1-1/2 cups. I also found that if you pack every layer as you go, there is too much room left open at the top of the jar. So I only packed it down at the top before adding a final layer of chocolate chips.     These are delicious. I cut the recipe in half and filled pint size jars instead quart and the cookies tasted the same and fantastic.
