Here's a great cake made with polenta. Lovely for either breakfast or dessert and not too sweet so it goes very well with maple syrup!


Serves: 12 

  • 1 cup (120g) polenta
  • 1/2 cup (120ml) milk
  • 100g shortening such as butter or margarine
  • 1/2 cup (100g) white sugar
  • 1 1/3 cups (190g) cake flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup (250ml) milk

  1. Preheat oven to 180 degrees C. Grease thoroughly a 20cm square cake pan.
  2. Combine polenta and milk. Sift flour, baking powder and salt. Stir together the egg and milk.
  3. Cream shortening and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture. Blend in polenta mixture.
  4. Bake for 40 to 45 minutes. Serve hot with maple syrup.
