Here's a great cake made with polenta. Lovely for either breakfast or dessert and not too sweet so it goes very well with maple syrup!
1 cup (120g) polenta
1/2 cup (120ml) milk
100g shortening such as butter or margarine
1/2 cup (100g) white sugar
1 1/3 cups (190g) cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup (250ml) milk
- Preheat oven to 180 degrees C. Grease thoroughly a 20cm square cake pan.
- Combine polenta and milk. Sift flour, baking powder and salt. Stir together the egg and milk.
- Cream shortening and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture. Blend in polenta mixture.
- Bake for 40 to 45 minutes. Serve hot with maple syrup.
Thank you for the recipe. I used less milk and a round cake tin but came out perfect. It was lovely with some jam.
