Rich Choc Chip Biscuits

    Lovely chocolately chocolate chip biscuits with walnuts. You can either add the straight rolled oats or grind them in a food processor for a smoother texture.

    Makes: 70 biscuits

    • 250g unsalted butter
    • 1 cup packed brown sugar
    • 1 cup white sugar
    • 2 eggs
    • 2 tablespoons milk
    • 2 teaspoons vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1 teaspoon salt
    • 2 1/2 cups rolled oats
    • 3 cups dark chocolate chips
    • 1 1/2 cups chopped walnuts

    1. Preheat oven to 180 degrees C.
    2. In a large bowl, cream the butter, brown sugar and white sugar until smooth. Add the eggs one at a time, beating after each addition. Stir in the milk and vanilla.
    3. Sift together the flour, baking powder, bicarb soda and salt then stir into the creamed mixture. Using a wooden spoon, stir in the rolled oats, chocolate chips and walnuts.
    4. Roll the dough into walnut sized balls and place 5cm apart on an ungreased baking tray. Bake for 10 to 12 minutes in the preheated oven. Cool biscuits on wire racks.
