Salsa Prawn Cocktail

    This prawn cocktail has come a long way since the 1970's. Fresh coriander, cucumber, spring onions and chilli give the classic entree a Mexican flavour boost.

    Serves: 8 

    • 650g cooked medium prawns, peeled and chilled
    • 1/2 large cucumber, diced
    • 1 small tomato, diced
    • 8 spring onions, thinly sliced
    • good handful fresh coriander, finely chopped
    • 1 chilli, thinly sliced
    • 600g jar tomato puree
    • 2 tablespoons red wine vinegar
    • 1 lime, juiced
    • For serving
    • shredded lettuce or sliced celery

    1. In a large bowl, combine prawns, cucumber, tomato, spring onion, coriander and chilli. Stir in tomato puree and vinegar. Squeeze lime juice over mixture.
    2. Serve in glasses with shredded lettuce or slices of celery.

    Used different ingredients. My family really enjoyed this recipe. I also added 1/2 an avocado. The only thing lacking was a little extra heat so next time I'll use 2 chillies instead of just 1.  -  14 Jul 2008

    I think the heat was just fine with this dish. We had some really fresh prawns and it was perfect way to showcase them without overpowering them.  -  23 Sep 2008
