    This cake is a bit like a banana cake with a touch of pineapple and cinnamon. Everyone I've served it to thinks it's a hit.

    Ingredients
    Serves: 14 

    • 1 1/3 cups (330ml) vegetable oil
    • 3 cups (600g) white sugar
    • 3 eggs, beaten
    • 1 cup crushed pineapple with juice
    • 2 cups mashed bananas
    • 1 cup chopped pecans
    • 3 cups (375g) plain flour
    • 1 1/2 teaspoons vanilla essence
    • 2 teaspoons bicarb soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon salt

    Directions

    1. Grease and flour a 23cm ring tin. Preheat oven to 180 degrees C.
    2. Mix together oil, sugar, eggs, pineapples, bananas, pecans, flour, vanilla, bicarb soda, cinnamon and salt. Pour into prepared ring tin.
    3. Bake for about 1 1/2 hours or until it tests done.
