Giant Chocolate Chip Biscuits
Here's a giant chocolate chip biscuit recipe that is sure to get a smile. You can even serve them as birthday cakes with candles!
Ingredients

- 250g unsalted butter
- 250g cream cheese
- 1 cup (125g) packed brown sugar
- 1/2 cup (125g) white sugar
- 2 eggs
- 2 1/3 cups (280g) plain flour
- 1 teaspoon bicarb soda
- 1/4 teaspoon salt
- 2 cups chopped cooking chocolate
- 1 cup coarsely chopped walnuts

- Preheat oven to 180 C. Lightly grease two 30cm pizza pans.
- Stir together flour, bicarb soda and salt and set aside.
- Using a large bowl cream together butter, cream cheese and sugars. Add eggs and beat until fluffy. Add flour mixture to creamed mixture, blending until dough becomes stiff. Stir in chocolate chunks and nuts until well blended.
- Divide dough in two. Press each half into the prepared pans. Bake 20-25 minutes or until lightly browned around the edges. Centres should be firm. Cool in the pan on wire rack. Serve by cutting into wedges.

This was good, but I definitely would not call it a cookie, although it looks like one. It has a cake-like texture. The flavor is good though and it bakes nicely but if you are looking for a cookie-like texture, skip this recipe. I baked 2 pans: 1 was a 13x9 the other was 8x8.
