Crab and Artichoke Baguettes

A quick and easy lunch that is also fancy! Crab and artichokes are grilled on baguettes with melted cheese. Absolutely delicious!


Serves: 4 

  • 375g crab meat
  • 400g quartered artichoke hearts
  • 125g sliced black olives
  • 1 bunch spring onions, chopped
  • 1 tomato, seeded and chopped
  • 1 cup grated Cheddar cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon cayenne pepper
  • 1 baguette

Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

  1. Preheat grill.
  2. In a large bowl place crabmeat, artichoke hearts, black olives, spring onions, tomato, cheddar cheese, mayonnaise and cayenne pepper. Mix well.
  3. Using a serrated knife cut the baguette into 4 pieces, then cut each piece in half lengthwise. Spoon crab mixture onto baguette halves.
  4. Grill in the oven until cheese is melted and top is starting to brown.
