Mexican Style Fish Bake

    Use mild salsa for a little heat and extra hot salsa for lots of heat! Serve with rice, red kidney beans, warm tortillas and lime margaritas if you are in the mood for a fiesta!

    Serves: 6 

    • 750g cod fillets
    • 1 cup ready prepared salsa
    • 150g coarsely grated sharp Cheddar cheese
    • 60g coarsely crushed corn chips
    • 1 avocado, cut in half, stone removed, peeled and sliced
    • 1/2 cup sour cream

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 200 degrees C. Lightly grease a 20x30cm baking dish.
    2. Rinse fish fillets under cold water, and pat dry with kitchen paper. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the grated cheese. Top with the crushed corn chips.
    3. Bake, uncovered, in the preheated oven for 15 minutes or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.

    I absolutely love this dish, it's so easy to make it, only takes a few minutes to prepare and is absolutely delish! Have also made a few times with chicken breast rather than fish, also extremely delish!!  -  04 Nov 2011


    I too am not a measurer. I spread salsa across the fish and sprinkled them heavily with cheese. I also used a spicy corn chip which added to the flavor. My fish-hating daughter loved it.
