Salmon is a lovely moist and oily fish that goes perfectly with tarragon and hazelnuts. Easy enough for family, fancy enough for company.


Serves: 4 

  • 4 salmon fillets
  • 1/2 cup fat-free mayonnaise
  • 1/2 cup chopped hazelnuts
  • 2 teaspoons minced fresh tarragon
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

  1. Preheat oven to 200 degrees C. Spray a baking tray with cooking spray.
  2. Arrange salmon on the baking tray and spread with equal amounts of mayonnaise. Top with hazelnuts and sprinkle with tarragon, orange zest, salt and pepper.
  3. Bake 15 minutes in the preheated oven or until fish flakes easily with a fork.
