Easy to make crunchy lollies, easily customised by using different essences and colourings. The hardest part is waiting for the sugar to reach the proper temperature.


Serves: 36 

  • 3 3/4 cups (800g) white sugar
  • 1 1/2 cups (375ml) golden syrup
  • 1 cup (250ml) water
  • 1 tablespoon orange or other flavoured essence
  • 1/2 teaspoon food colouring
  • 1/4 cup icing sugar for dusting

  1. In a medium saucepan stir together the white sugar, golden syrup and water. Cook, stirring, over medium heat until sugar dissolves, then bring to a boil. Without stirring, heat until a small amount of syrup dropped into cold water forms hard, brittle threads.
  2. Remove from heat and stir in flavoured essence and food colouring, if desired. Pour onto a greased baking tray and dust the top with icing sugar. Let cool and break into pieces. Store in an airtight container.
