Fried Turkey Sandwiches

    Here's an improvement on a simple toasted cheese sandwich - turkey fried with cheese and salsa! Great served with coleslaw and soup.

    Serves: 4 

    • 4 tablespoons mayonnaise
    • 2 tablespoons salsa
    • 2 spring onions, chopped
    • 8 slices sourdough bread
    • 250g sliced turkey
    • 4 slices cheddar cheese
    • 4 tablespoons butter

    1. Mix the mayonnaise, salsa and spring onions in a small bowl. Spread the seasoned mayonnaise evenly on each slice of bread. Layer the turkey and cheese on 4 of the slices. Top with remaining bread to make 4 sandwiches.
    2. Melt 2 tablespoons butter in a large frypan over medium heat. Fry sandwiches in butter until lightly toasted. Add remaining butter to frypan, turn sandwiches over. Cook until the cheese is melted and the bread is browned.

    This sandwich was dinner for the kids with homemade tomato soup. I followed the recipe closely, only scaling the recipe back to two sandwiches, I used whole wheat bread and I cooked the sandwiches in my cast iron skillet. I was a little concerned that the kids wouldn't like them but they both thought this was the best sandwich EVER.     I thought the sourdough was a little tough for making a nicely melted sandwich. My turkey was at room temperature when I bit into it shortly after pulling it off the stove. My bread wasn't sliced thick either. My husband complained about the mayo, too much, and never even realized it had salsa in it. So make sure you don't use a mild salsa. I also think I will use good old American Cheese singles to make the sandwich gooier. It has a ton of potential though, and I might consider trying it again.
