    Here's a toasted cheese sandwich with a little more to it! This spicy snack goes wonderfully with a bowl of tomato soup.

    Ingredients
    Serves: 4 

    • 8 slices bread
    • 4 slices Cheddar cheese
    • 1 large tomato, sliced
    • 1 chilli pepper, seeded and finely sliced
    • 2 teaspoons dried basil
    • salt and pepper to taste
    • 2 tablespoons butter

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Butter one side of each slice of bread and place 4 of the slices butter-side down in a frypan over medium heat.
    2. On each piece of bread place one slice of cheese, 1 slice of tomato and a few slices of chilli. Sprinkle dried basil and salt and pepper to taste. Top each sandwich with a slice of buttered bread, butter-side up.
    3. Fry sandwiches until golden brown, about 2 to 3 minutes each side.

    serrano peppers are what 4-5 times hotter than the jalapeno? This is just a little too hot for most of my guests and family. When I made this I had a few different types of peppers on hand. Some habaneros, Anaheim chile,banana peppers as well as just some simple yellow sweet bells. That way people could pick their spice level.
