Classic Green Goddess Salad Dressing

    Green Goddess dressing is an American salad dressing containing anchovies and fresh parsley, chives and tarragon. It's great served with fish or steamed artichokes.

    Serves: 6 

    • 2 cups mayonnaise
    • 4 anchovy fillets, minced
    • 1 spring onion, chopped
    • 2 teaspoons chopped fresh parsley
    • 2 teaspoons chopped fresh chives
    • 1 tablespoon tarragon vinegar
    • 1 teaspoon chopped fresh tarragon

    1. Mix together mayonnaise, anchovies, spring onion, parsley, chives, vinegar and tarragon.
    2. Refrigerate until ready to serve.

    Yum! Not too salty, Don't be scared of the anchovies!!! They bring the perfect savoury flavour to this creamy dressing. Thumbs up for being fast, no fuss, and tasty! I like adding the hand chopped chives last, not blending them. They are small anyway and make it look pretty. I may try garlic chives next time!  -  18 Nov 2016
