Feta Pasta Bake

This is a really easy and absolutely delicious pasta bake. If you don't like feta cheese, you can substitute parmesan. Serve with a green salad.


Serves: 6 

  • 500g rotini pasta
  • 500g peeled and diced tomatoes, drained
  • 2 tablespoons chopped green capsicum
  • 1/4 cup chopped spring onion
  • 3 cups tomato pasta sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup sliced black olives
  • 60g grated mozzarella cheese
  • 2 tablespoons crumbled feta cheese

  1. Preheat the oven to 200 degrees C.
  2. Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, about 8 minutes. Drain and pour into a deep casserole dish.
  3. Stir tomatoes, green capsicum, spring onion, olives and tomato sauce into the pasta. Season with basil and oregano and mix until evenly blended. Sprinkle mozzarella and feta cheese over the top.
  4. Bake for 30 minutes in the preheated oven until cheese is melted and bubbly. Let stand for a few minutes before serving.
