This cake which incorporates plump boiled raisins is best topped with a cinnamon glaze, not a thick icing. You will see the difference!


Makes: 1 cake

  • 1 cup raisins
  • 1 1/2 cups (375ml) water
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 3 teaspoons boiling water
  • 2 cups (250g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon vanilla essence
  • 125g butter, melted
  • 1 cup icing sugar
  • 1 teaspoon ground cinnamon
  • 1/3 cup milk

  1. Heat oven to 170 degrees C. Grease a loaf tin.
  2. In a saucepan, boil raisins slowly in the water until there is 1 cup of water left and the raisins are plump. Allow mixture to cool.
  3. Stir in sugar and egg. Mix spices with 3 teaspoons boiling water and add to raisin mixture. Add flour, bicarb soda, vanilla and last, the melted butter. Blend well. Pour into loaf tin.
  4. Bake for 40 to 50 minutes. When cool make glaze by mixing icing sugar, ground cinnamon and milk. Spread on top of cooled cake.
