Here's a great sweet muffin recipe which uses biscuit crumbs in place of flour. You'll be amazed how well this works, and how tasty it is.


Serves: 10 

  • 2 1/2 cups digestive biscuit crumbs
  • 1/4 cup white sugar
  • 2 teaspoons baking powder
  • 1 cup (250ml) whole milk
  • 1 egg, slightly beaten
  • 2 tablespoons honey

  1. Preheat oven to 200 degrees C. Grease 10 muffin cups or line with paper muffin liners.
  2. In a large bowl combine cracker crumbs, sugar and baking powder. Stir in milk, egg and honey; mixing just until moistened. Spoon batter into prepared muffin cups.
  3. Bake in preheated oven for 15 to 18 minutes until a toothpick comes out clean. Let stand for 5 minutes then move to a wire rack to cool completely.
