    Chocolate Brownies with a Shortbread Crust

    As an alternative from both shortbread and brownies, try a combination of the two! The textures are delicious and they are the perfect thing for Christmas.

    Serves: 12 

    • 1 cup (125g) plain flour
    • 1/4 cup white sugar
    • 125g butter, softened
    • 1/4 cup (30g) plain flour
    • 1/4 cup cocoa powder
    • 1/2 teaspoon baking powder
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1 (395g) tin sweetened condensed milk
    • 200g milk chocolate, chopped
    • 3/4 cup chopped walnuts

    1. Preheat the oven to 180 degrees C. In a medium bowl, stir together 1 cup of plain flour and sugar. Cut in butter until the mixture is crumbly. Press firmly into the bottom of a 23cm square baking tin.
    2. Bake for 15 minutes in the preheated oven, until firm and slightly golden. Set aside to cool.
    3. In a medium bowl, mix together 1/4 cup flour, baking powder and cocoa powder. Make a well in the centre, and add the egg, vanilla and condensed milk. Mix until well blended. Stir in the chopped chocolate and walnuts. Spread the mixture over the cooled crust.
    4. Bake for 20 minutes in the preheated oven, until brownies begin to pull away from the edges and the top appears dry. Cool and cut into squares. Store tightly covered at room temperature.
