    Hot, spicy and sweet; this summery mango salsa made with barbecued onion, fresh coriander and hot chilli peppers is great with fish or pork chops, or simply with tortilla chips. If habanero chillies are not available, use dried red chilli flakes or finely chopped small red chillies to suit your taste.

    Serves: 24 

    • 1 red onion, peeled and halved
    • 12 mangoes, peeled, seeded and diced
    • 1/2 head of garlic, peeled and crushed
    • 2-3 small hot chillis, seeded and very finely chopped
    • 1 bunch fresh coriander, rinsed and chopped
    • 2 tablespoons apple cider vinegar
    • salt, to taste

    1. Preheat barbecue for high heat. Place onion on grill and cook until slightly blackened.
    2. Dice onion, and combine with mango, garlic, habanero chilli, coriander, and apple cider in a mixing bowl. Season with salt to taste.
