    This fruit cake is pretty quick and easy and uses tinned mangoes and their juice. Sweet and just a bit spicy from cinnamon and nutmeg.

    Ingredients
    Serves: 12 

    • 450g tin mango slices, with juice
    • 400g mixed fruit
    • 2 tablespoons rum
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1 egg, beaten
    • 1 teaspoon vanilla essence
    • 1 cup (125g) plain flour
    • 1 teaspoon baking powder

    1. Combine mango slices, juice, mixed fruit, rum and spices in a medium saucepan. Stir over low heat for 10 minutes or until hot. Remove from heat; cool.
    2. Preheat oven to 150 degrees C. Grease and flour a 20x10 cm loaf tin.
    3. Combine fruit mixture with egg and vanilla in a large bowl. Stir in the sifted flour and baking powder. Pour into prepared pan.
    4. Bake for 55 to 60 minutes, or until a wooden skewer inserted into the centre of the cake comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
