Here's a new take on the pasta salad with all the flavours of fresh gazpacho soup! The perfect light meal for the hot summer months.


Serves: 6 

  • 500g spiral pasta
  • 2 cups chopped cooked chicken
  • 1 small cucumber, chopped
  • 1 red capsicum, chopped
  • 1 large tomato, chopped
  • 1 clove garlic, chopped
  • 3/4 cup (185ml) tomato-vegetable juice (e.g., V-8)
  • 1/4 cup lemon juice
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Mix the pasta with the chicken, cucumber, capsicum, tomato and garlic. Pour the tomato-vegetable juice and lemon juice over the salad; gently toss to coat. Season with black pepper and salt; serve warm or chilled.
