    This easy salad includes thinly sliced radishes, spring onions, celery and a bit of mayonnaise. Any short pasta such as penne, farfalle or shells can also be used.

    Serves: 10 

    • 1 (500g) packet macaroni
    • 1 bunch radishes, rinsed andsliced
    • 1 spring onion, trimmed and sliced including some green tops
    • 6 large stalks celery, trimmed and chopped
    • 3 tablespoons mayonnaise
    • salt and pepper to taste

    1. Bring a large saucepan of lightly salted water to a boil. Add the macaroni and cook for 8 to 10 minutes or until al dente. Rinse under cold water and drain.
    2. In a large bowl, combine the macaroni, radishes, spring onions, celery, mayonnaise, salt and pepper together. Mix well, chill, and serve with sliced tomatoes.
