    This recipe makes a chocolate-dipped frozen banana dessert that is perfect for a hot day. Play around with the ingredients a little -- you can use almond butter, cashews or whatever sounds good!

    Ingredients
    Serves: 8 

    • 4 bananas, peeled and halved horizontally
    • 1/3 cup peanut butter
    • 250g cooking chocolate, chopped
    • 1/2 cup roasted peanuts, chopped
    • 8 paddlepop sticks

    Directions

    1. Insert 1 paddlepop stick into the cut end of each banana half. Place the bananas on a greaseproof paper-covered baking tray and freeze until the bananas are frozen through, about 2 hours.
    2. Remove the frozen bananas from the freezer and spread a layer of peanut butter on each banana. Place the peanut butter-covered bananas back in the freezer for 30 to 45 minutes.
    3. Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
    4. Dip each frozen banana in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll the dipped bananas in the chopped peanuts and place on the greaseproof paper covered baking tray; freeze until the chocolate is firm, about 1 to 2 hours.

    OMG! My niece went crazy for these and so did the other kids - I guess that's why I now claim the title of favorite Aunt! These are so good and the possibilities are endless in terms of what you stick on these.     These are so amazing! Didn't have popsicle sticks so I just cut the bananas in 4 pieces each. Dipped in dark chocolate. The chocolate froze too fast to put the nuts (I used cashews) on, so the next time I made it I mixed the chocolate and nuts before dipping banana pieces. Also read somewhere that you should use really ripe bananas, that way the banana flavour is really apparent.  -  21 May 2011  (Review from Allrecipes USA and Canada)

    Oh yum! I'm always trying to find healthy desserts for my significant other who every now and then gets a hankering for something sweet. These are SO good and you're right Kelsey, there are so many possibilities to experiment with. For a lighter and more refreshing treat, I also dipped the banana's into yogurt and rolled in a healthy cereal. Guilt free and delicious.
