Moist Cantaloupe Bread

    It may seem unusual to use cantaloupe in a bread recipe, but the end result is unbelievably delicious and moist. Serve toasted with cream cheese.

    Serves: 15 

    • 2 1/4 cups cubed cantaloupe
    • 1 (7g) packet instant yeast
    • 3 1/4 cups (400g) bread flour
    • 2 tablespoons wheat gluten
    • 1/3 cup powdered milk
    • 3 tablespoons white sugar
    • 1 teaspoon salt
    • 1/2 teaspoon paprika
    • 1 egg
    • 3 tablespoons butter, softened
    • 1 tablespoon orange zest

    1. Place 1 1/2 cups cantaloupe cubes in a blender or food processor and puree. Reserve remaining 3/4 cup cantaloupe cubes.
    2. Place yeast, flour, gluten, powdered milk, sugar, salt, paprika, egg, butter, orange zest, cantaloupe cubes and cantaloupe puree in the pan of the bread machine. Select White Bread cycle; press Start. This is a soft, sticky dough. If any of it clings to the sides of the pan at the end of the first kneading you can push it down with a rubber spatula.
    3. Let cool, cut into thin slices and serve toasted with cream cheese.
