Chicken Fajita Wrap

    These chicken wraps are easy and tasty and a good way to get the kids to eat their veggies. You can add other fillings such as lettuce and tomato if you like.

    Serves: 10 

    • 2 green capsicums, sliced
    • 1 red capsicum, sliced
    • 1 onion, thinly sliced
    • 1 tablespoon oil
    • 1 cup mushrooms, sliced
    • 2 cups diced, cooked chicken meat
    • 1 packet fajita seasoning mix
    • 10 flour tortillas

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Saute capsicums and onion in oil until tender. Add mushrooms and chicken. Continue to cook on low heat until heated through. Stir in seasoning mix and blend thoroughly.
    2. Warm tortillas and roll mixture inside.

    This fajita recipe just did not do it for my husband and I. It did not taste bad, however it taste nothing like fajitas, so if you are looking for an authetic tasting fajita I would recommend trying another recipe.     I have been making these for years, I love this recipe. I use 2 green bell peppers and I sometimes use strips of sirloin (1½ lbs) instead of chicken. I use a whole carton of sliced fresh mushrooms and for extra flavor, I sometimes add a packet of fajita seasoning as well. Toppings: shredded cheese, diced tomatoes, sliced black olives and sour cream. This is quick, easy and there's just one pan to wash!
