This pasta salad contains hard-boiled eggs and butter beans and is robust enough to be a meal in itself, so it's great for trips and picnics.


Serves: 8 

  • 3 cups spiral pasta
  • 3 hard-boiled eggs, chopped
  • 375g tinned tuna, drained and flaked
  • 90g grated Cheddar cheese
  • 3/4 cup chopped celery
  • 1/4 cup finely chopped onion
  • 1/2 cup roasted red capsicums, drained and chopped
  • 250g tinned butter beans, drained
  • 3/4 cup mayonnaise
  • 1/2 lemon, juiced
  • 1/2 teaspoon paprika
  • 1 dash salt to taste

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool.
  2. In a large bowl, combine pasta, eggs, tuna, Cheddar cheese, celery, onion, roasted red capsicums and butter beans. Whisk together mayonnaise, lemon juice and paprika. Season with salt. Pour dressing over pasta mixture and mix together.
