Light Lemon Biscuits

    This recipe makes light and delicious little biscuits. The recipe is Portuguese. You can also decorate the biscuits with icing and silver cachous.

    Serves: 24 

    • 3 egg whites
    • 3/4 cup white sugar
    • 1 teaspoon lemon zest
    • 1 pinch salt
    • 1 teaspoon cornflour
    • 1 teaspoon vinegar
    • 1 teaspoon vanilla essence

    Preparation:15min  ›  Cook:1hour  ›  Extra time:8hours drying  ›  Ready in:9hours15min 

    1. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
    2. In a large glass bowl beat the egg whites with an electric mixer until soft peaks form. Gradually beat in sugar until firm peaks form. Fold in lemon zest, salt, cornflour, vinegar and vanilla. Spoon in mounded tablespoonfuls onto the baking tray.
    3. Place baking tray into oven and reduce temperature to 120 degrees C. Cook 1 hour. Turn off oven and allow to dry 8 hours, or overnight.
