    This one of my favourite Christmas biscuit recipes. It makes a very moist and delicious bar. Always roll in white sugar and store in a container with a tight lid.

    Ingredients
    Serves: 15 

    • 2 cups (375g) packed brown sugar
    • 125g shortening such as butter or margarine
    • 2 eggs
    • 2 cups (250g) plain flour
    • 2 teaspoons ground cinnamon
    • 1 teaspoon ground cloves
    • 1/2 teaspoon ground ginger
    • 1 teaspoon bicarb soda
    • 1 cup (250g) buttermilk
    • 1 tablespoon distilled white vinegar
    • 1/3 cup white sugar for decoration

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease and flour a 20x30cm baking dish.
    2. In a large bowl cream shortening and sugar. Add eggs one at a time and mix until light and fluffy. Sift together the flour, cinnamon, cloves, ginger and bicarb soda. Add dry ingredients to sugar mixture alternately with the buttermilk and vinegar. Mix well with an electric mixer for 2 to 3 minutes.
    3. Pour the batter into the prepared pan and bake in preheated oven for 35 to 40 minutes or until it feels firm.
    4. After cooling, cut into 5cm bars. Roll each bar in sugar and store in covered tins. Enjoy!!

    Hi Venice, we've altered this recipe to replace the copha with butter or margarine, which should work fine as shortening. Thanks! - 12 Jan 2012
