Preheat oven to 180 degrees C. Grease and flour a 20x30cm baking dish.
In a large bowl cream shortening and sugar. Add eggs one at a time and mix until light and fluffy. Sift together the flour, cinnamon, cloves, ginger and bicarb soda. Add dry ingredients to sugar mixture alternately with the buttermilk and vinegar. Mix well with an electric mixer for 2 to 3 minutes.
Pour the batter into the prepared pan and bake in preheated oven for 35 to 40 minutes or until it feels firm.
After cooling, cut into 5cm bars. Roll each bar in sugar and store in covered tins. Enjoy!!
