A great basic cake recipe, better than you can make out of a box and not too dry. The cake can be filled or decorated as desired.


Serves: 12 

  • 250g butter
  • 1 1/2 cups (330g) white sugar
  • 8 egg yolks
  • 3/4 cup (190ml) milk
  • 1 1/2 teaspoons vanilla essence
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

  1. Preheat oven to 180 degrees C. Grease and flour 2 20cm round cake tins. Sift together the flour, baking powder and salt. Set aside.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pans.
  3. Bake in the preheated oven for 25 to 30 minutes, or until tops spring back when lightly tapped. Cool 15 minutes before turning out onto cooling racks.
