If you are looking to make your own pizza base this is a great recipe that gives a soft and doughy inside but with a lovely crust on the outside.

Ingredients
Serves: 15 

  • 2 1/4 teaspoons instant dried yeast
  • 1/2 teaspoon dark brown soft sugar
  • 1 1/2 (375ml) cups warm water (45 degrees C)
  • 1 teaspoon salt
  • 1 1/2 tablespoons olive oil
  • 4 cups (500g) plain flour

Directions

  1. In a large bowl, dissolve the yeast and brown sugar in the warm water, and let sit for 10 minutes.
  2. Stir the salt and oil into the yeast mixture. Mix in half of the flour.
  3. Turn dough out onto a clean, well floured surface and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl and cover with a damp cloth.
  4. Let the dough rise until double, this should take about 1 hour.
  5. Punch down the dough and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favourite pizza recipe.
  6. Preheat oven to 220 degrees C. If you are baking the dough on a pizza stone, you may place your toppings on the dough and bake immediately. If you are baking your pizza in a tray, lightly oil the pan and let the dough rise for 15 or 20 minutes before topping and baking it.
  7. Bake pizza in preheated oven for about 15-20 minutes until the cheese and crust are golden brown.

Something else. Jay thank you so much for an EXCELLENT thick pizza base, that was crisp on the outside and chewy/tender on the inside! The only additions I did were: I baked them for 10 minutes prior to adding the toppings, and both tins were olive oiled WELL, and dusted with polenta. They came out of the tin very easy onto the cutting board. It was easy to make this. Just have to adjust weather and flour consistency to the stickiness of the dough. Some days need less, some days need MUCH more. I never roll the dough out, I just use my hands and flatten it in the bottom of the tins, working up the sides. - 18 Jul 2008

I had been looking for a pizza base that is thick and fluffy and this is the closest and best so far! It definitely makes 2 bases unless you have a huge pizza tin. And the trick to getting a crisp bottom on your crust is to bake it on a lower rack in your oven so your crust bakes before your toppings burn. - 18 Jul 2008
