Extra-Chocolate Chocolate Cake

    The blend of cocoa powder and chocolate chips makes for a delicious chocolate cake experience. Very easy to make and very moist.

    Serves: 9 

    • 1 1/2 cups (185g) plain flour
    • 1 cup (150g) brown sugar
    • 1/4 cup unsweetened cocoa powder
    • 1 teaspoon bicarb soda
    • 1 teaspoon salt
    • 1/3 cup vegetable oil
    • 1 tablespoon vinegar
    • 2 teaspoons vanilla essence
    • 1 cup (250ml) milk
    • 1 cup chocolate chips

    1. Preheat oven to 180 degrees C. Grease and flour an 20cm square pan. Combine the flour, brown sugar, cocoa powder, bicarb soda and salt in prepared pan. Mix well with a fork.
    2. Make three "wells" in the dry ingredients. Pour oil in the first, vinegar in the second, and vanilla in the third. Pour milk over the top and mix all ingredients with a fork until well blended. Pour chocolate chips over the top.
    3. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the centre of the cake comes out with moist crumbs. Cool in pan for 15 minutes, then cut and serve directly from the pan.

    Fantastic cake--very moist, very chocolately, very easy to make. I have no idea why anyone would choose to mix it in the pan, though, unless it's just for the novelty of the idea, and to avoid dirtying a bowl. Next time I make it (and I will make it again) I'm going to just mix it in a bowl and pour it in the pan. I followed the directions this time, but stirring the mixture in a pan that's been greased and floured results in the cake sticking to the pan in places. Not a huge problem, but it would be easier to serve if it came out cleanly from the pan. Plus, the ingredients would be much easier to mix thoroughly in a bowl. It's fun to call it a crazy mixed-up cake and give funny directions for making it, but it's not practical to stir it in the pan.
