Cranberry Apple Crumble

    This recipe is similar to an apple crumble but adds fresh cranberries as well. If you can't find fresh cranberries, you can of course just use apple.

    Serves: 12 

    • 3 cups fresh cranberries
    • 3 cups coarsely chopped, peeled apples
    • 3/4 cup (185g)white sugar
    • 1 cup (155g) rolled oats
    • 1/3 cup plain flour
    • 1/2 cup chopped pecans
    • 1/2 cup dark brown sugar
    • 125g butter

    1. Preheat the oven to 180 degrees C. Lightly grease a casserole dish.
    2. In a medium bowl toss together the cranberries, apples and white sugar. Pour into the prepared casserole. Mix together the oats, flour, pecans and brown sugar in the same bowl. Spread evenly over the fruit in the dish. Pinch off small pieces of butter and arrange them on top of the oat mixture.
    3. Bake, covered, for 50 minutes in the preheated oven. Remove the lid and bake for an additional 10 minutes, or until the top is toasted.

    I made this for our 3rd annual "friends"(no family)Thanksgiving. I always want a cranberry dish for some color and I have made some cranberry dishes that do nothing more than look pretty. I was really pleased how well this went over. It got 2 thumbs up from quite a few guests.     I put the apple chunks(with peels on) and cranberries in the food processor to chop them up. Then served with vanilla ice cream as a dessert. It's like an apple and cranberry crisp but is heavy on the cranberries--which is good!!! I actually cut the white sugar down to less than a 1/2 cup.
