Dried cherries, if you can find them, make a wonderful addition to couscous. If you can't find them you can always substitute dried apricots.


Serves: 4 

  • 1 cup (250ml) chicken stock
  • 1/4 cup (65ml) water
  • 1/4 cup dried cherries
  • 1 tablespoon butter
  • 1 pinch salt
  • 1 pinch ground black pepper, to taste
  • 1 cup uncooked couscous

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. In a 2 litre saucepan combine chicken stock, water, dried cherries, butter, salt and pepper. Cook over high heat until boiling.
  2. Stir in couscous, cover and remove from heat. Let stand 5 minutes. Fluff with a fork and serve immediately.
