Toasted Cheese with Corned Beef

    A very quick fried sandwich, perfect for a light lunch. It has corned beef, cheese and mayonnaise in it, and it's a big hit with kids.

    Serves: 1 

    • 2 slices bread
    • 1 tablespoon butter
    • 1 teaspoon mayonnaise
    • 1 slice tinned corned beef
    • 1 cheese slice

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Preheat frypan over medium heat. Butter each slice of bread on 1 side only. Spread mayonnaise on the un-buttered sides.
    2. Place 1 slice of bread buttered side down in the frypan. Layer corned beef and cheese slice on bread. Cover with remaining slice of bread, buttered side up.
    3. Cook for 5 minutes on each side or until toast is golden brown and cheese is melted.

    Used Swiss instead of American and added minced, sauteed onions to the corned beef. Really good! The sauteed onions made this so much better (tried it without and was less impressed).
