    A delicious and easy pasta salad which is a bit different as it uses angel hair spaghetti instead of the standard macaroni. Very flavourful and zesty.

    Serves: 12 

    • 500g angel hair spaghetti
    • 1 cup (250ml) Italian dressing, to taste
    • 1/4 cup (60ml) red wine vinegar
    • 1 small red onion, diced
    • 250g pepperoni, diced
    • 130g mushrooms, sliced
    • 1 (400g) tin Italian-style diced tomatoes, drained
    • 90g green olives, sliced
    • salt and pepper, to taste
    • 2 cups grated Parmesan cheese

    1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a serving bowl.
    2. Pour the salad dressing and vinegar over the pasta then mix well.
    3. Add the onion, pepperoni, mushrooms, tomatoes, olives, salt and pepper and parmesan cheese then stir until well combined.
    4. Serve at room temperature or cover and refrigerate for several hours or overnight.
