    One of the easiest biscuit recipes I know these tasty coconut and oat biscuits are regularly cooked in our house.

    Serves: 24 

    • 250g butter
    • 1 cup (155g) brown sugar
    • 1 cup (220g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 2 cups (185g) rolled oats
    • 1 cup desiccated coconut

    1. Preheat oven to 180 degrees C.
    2. In a medium mixing bowl cream butter and sugars. Add eggs and vanilla until blended. Set aside.
    3. In a separate bowl combine the plain flour, baking powder, bicarb soda and oats then combine. Add coconut.
    4. Combine wet and dry ingredients until moist.
    5. Drop on greased baking tray about 2 to 4cm apart.
    6. Bake for 10 minutes or until golden. Remove from oven immediately. If overcooked the biscuits get hard.
