Italian Sausage with Squash and Zucchini

    Italian sausage is browned with squash, zucchini and onion, then simmered with tomatoes for a quick, satisfying meal. Serve with crusty bread or over pasta.

    Serves: 6 

    • 750g Italian style sausages
    • 2 small zucchini, sliced
    • 1 small button squash, sliced
    • 1/2 onion, chopped
    • 1 (400g) tin whole peeled tomatoes

    Preparation:20min  ›  Cook:25min  ›  Ready in:45min 

    1. In a large frying pan over medium heat, brown the sausages until the inside is no longer pink. Cut sausages into slices, and continue cooking until browned.
    2. Stir in the zucchini, button squash and onion; cook and stir for 2 minutes. Pour in the tomatoes. Reduce heat, cover and simmer for 10 to 15 minutes.

    Used different ingredients. This recipe was delicious!! My husband loved it. I took the advice of the other reviews and added alot of italian spices, such as oregano, basil, thyme, & italian seasoning, and also fresh garlic and about half a can of chicken stock. After all that it was amazing and I will definatley make this again  -  29 Sep 2008


    Used different ingredients. Excellent. Quick and easy. Used diced tomatoes with Italian seasoning. Used sweet basil Italian sausage and added additional amounts of garlic, oregano and basil. Served on top of bow tie pasta and topped with fresh grated parmesan. Will make this many more times and for company.  -  29 Sep 2008


    Used different ingredients. We made this with wonderful fennel-seasoned Italian sausage from the local butcher and served it atop bow-tie/farfalle pasta. Lacking summer squash, we did without and it was still great. We'll see how the leftovers are tomorrow!  -  29 Sep 2008
