    Perfect for a hot summer's day this sweet mojito combines coconut cream with white rum and a touch of mint and lime.

    Serves: 2 

    • 4 cups ice cubes
    • 2 1/2 limes, rind removed
    • 215ml coconut cream
    • 115ml white rum
    • 5 sprigs fresh mint leaves
    • 2 mint sprigs, for garnish
    • 2 lime wedges, for garnish

    1. Blend the ice, limes, coconut cream, rum and mint leaves together in a blender until smooth.
    2. Pour into two glasses and garnish each with a mint sprig and lime wedge as desired.
