A wonderful Italian recipe for an uncooked sauce made with fresh tomatoes. You don't have to cook a thing except for the pasta!

Ingredients

5 tomatoes, seeded and diced
4 cloves garlic, crushed
handful chopped fresh basil
125ml (1.2 cup) olive oil
salt to taste
2 tablespoons grated Parmesan cheese
1, 500g packet pasta, any shape you prefer

Preparation method

1. Combine tomatoes, garlic, basil and olive oil in a non-metallic bowl. Stir in salt. Cover with plastic film. Allow to stand at room temperature at least 2 hours, or as long as 10 hours.
2. Cook choice of pasta in a large saucepan of boiling salted water as packet directs until al dente. Drain. Pour uncooked sauce over hot pasta, and toss. Add grated Parmesan cheese to your liking.

    Tweak: unique9981 Altered ingredient amounts:

    Used home grown tomatoes and home grown herbs. Tend to be sparse with salt. Lots and lots of shaved parmesan.

    Tweak: DAFFY128 Something else:

    Excellent recipe, however it needs just a little more flavour. Don't forget to add half a minced red onion (or more to taste). That really complements the tomato flavour. Salt needs to be about half a teaspoon and a hint of freshly ground black pepper. Also, if you're in a hurry or out of fresh tomatoes, the tinned tomatoes actually substitute quite well. You can buy whole tinned and chop them yourself or buy them already chopped. Oh, and I think 4 T of olive oil was fine since I am not too fond of oil. I would just add an extra tomato or two to have enough sauce. FABULOUS fresh recipe.
