A wonderful Italian recipe for an uncooked sauce made with fresh tomatoes. You don't have to cook a thing except for the pasta!

Ingredients

5 tomatoes, seeded and diced
4 cloves garlic, crushed
handful chopped fresh basil
125ml (1.2 cup) olive oil
salt to taste
2 tablespoons grated Parmesan cheese
1, 500g packet pasta, any shape you prefer

Preparation method

1. Combine tomatoes, garlic, basil and olive oil in a non-metallic bowl. Stir in salt. Cover with plastic film. Allow to stand at room temperature at least 2 hours, or as long as 10 hours.
 
2. Cook choice of pasta in a large saucepan of boiling salted water as packet directs until al dente. Drain. Pour uncooked sauce over hot pasta, and toss. Add grated Parmesan cheese to your liking.

  • Tweak: Paula125 Used different ingredients:

    My husband and son #2 aren't keen on parmesan so I omitted that and put a splash of balsamic vinegar instead. Also, if you can get it, try Red Kelly's pepperberry rock salt rather than ordinary salt.

    Tweak: unique9981 Altered ingredient amounts:

    Used home grown tomatoes and home grown herbs. Tend to be sparse with salt. Lots and lots of shaved parmesan.
