    This is a very rich and decadent cake but because it uses premade ingredients it is a snap to prepare! The rum glaze makes it perfect for festive occasions like Christmas.

    Ingredients
    Serves: 12 

    • 1/2 cup chopped walnuts
    • 1 (530g) packet chocolate cake mix
    • 1 (100g) packet instant chocolate pudding mix
    • 4 eggs
    • 1/2 cup (125ml) water
    • 1/2 cup (125ml) vegetable oil
    • 1/2 cup (125ml) white rum
    • Rum glaze
    • 125g butter
    • 1 cup (220g) white sugar
    • 1/4 cup (65ml) white rum
    • 1/4 cup (65ml) water

    Directions
    Preparation:25min  ›  Cook:1hour  ›  Ready in:1hour25min 

    1. Preheat oven to 170 degrees C. Grease one 23cm ring tin. Place chopped nuts in the bottom of the tin.
    2. With an electric mixer beat cake mix, pudding mix, eggs, oil, 1/2 cup water and 1/2 cup rum on high speed for 2 minutes. Pour batter into prepared ring tin over the top of the chopped nuts.
    3. Bake in the preheated oven for 50 to 60 minutes.
    4. To make rum glaze:

    5. In a saucepan combine the butter, sugar, 1/4 cup rum and 1/4 cup water. Bring mixture to a boil and simmer two minutes. Pour immediately over still warm cake. Decorate with walnut halves if desired.

    FABULOUS!!! I gave this out over the holidays and everyone raved and wanted the recipe! I did make a few changes... I used Meyers rum instead of white rum in both the cake & the glaze. I also substituted brown sugar for the white sugar in the glaze. I used mini Bundt pans (to make 6 cakes)and decreased the cooking time until a toothpick or knife inserted came out clean.  -  03 Jan 2001  (Review from Allrecipes USA and Canada)

    What could be better than chocolate and rum mixed together? My only suggestions are that you use light rather than white rum, and make it a day ahead so that the flavors have time to improve.
