Chocolate Walnut Cake with Rum Glaze

This is a very rich and decadent cake but because it uses premade ingredients it is a snap to prepare! The rum glaze makes it perfect for festive occasions like Christmas.

Serves: 12 

  • 1/2 cup chopped walnuts
  • 1 (530g) packet chocolate cake mix
  • 1 (100g) packet instant chocolate pudding mix
  • 4 eggs
  • 1/2 cup (125ml) water
  • 1/2 cup (125ml) vegetable oil
  • 1/2 cup (125ml) white rum
  • Rum glaze
  • 125g butter
  • 1 cup (220g) white sugar
  • 1/4 cup (65ml) white rum
  • 1/4 cup (65ml) water

  1. Preheat oven to 170 degrees C. Grease one 23cm ring tin. Place chopped nuts in the bottom of the tin.
  2. With an electric mixer beat cake mix, pudding mix, eggs, oil, 1/2 cup water and 1/2 cup rum on high speed for 2 minutes. Pour batter into prepared ring tin over the top of the chopped nuts.
  3. Bake in the preheated oven for 50 to 60 minutes.
  4. To make rum glaze:

  5. In a saucepan combine the butter, sugar, 1/4 cup rum and 1/4 cup water. Bring mixture to a boil and simmer two minutes. Pour immediately over still warm cake. Decorate with walnut halves if desired.
