Rocky Road Biscuits
These are a decadent biscuit packed with the flavours of rocky road; these being chocolate, marshmallows and nuts.
Ingredients
Serves: 24
- 125g butter
- 1/2 cup dark chocolate chips
- 1 cup (220g) white sugar
- 2 eggs
- 1/2 teaspoon vanilla essence
- 1 1/2 cups (185g) plain flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped walnuts
- 1/2 cup dark chocolate chips
- 48 miniature marshmallows

- Preheat oven to 200 degrees C.
- In a small saucepan melt together the butter and the chocolate chips stirring frequently. Remove from heat and set aside to cool.
- In a medium bowl stir together the melted chocolate mixture with the sugar, eggs and vanilla.
- Sift together the flour, baking powder and salt then stir into the chocolate mixture.
- Stir in the chopped nuts and remaining chocolate chips.
- Drop dough by rounded teaspoonfuls onto unprepared baking trays. Press a miniature marshmallow into the centre of each biscuit.
- Bake for 7 to 8 minutes in the preheated oven. Remove from baking trays immediately to cool on wire racks.

These cookies taste great and are very easy to throw together. The only down side is that the marshmellows melt away in the oven. Try placing the marshmellows on top immediately after the cookies come out of the oven. Enjoy! - 13 Feb 2002 (Review from Allrecipes USA and Canada)
Delecatably orgasmic! This was an amazing recipe base. Made a few changes: Melted 1c. Double choc chips W/butter Used Almonds instead, Used 1/2c. Brown Sugar + 1/2c white. Rolled 2 mini mellows inside, making a ball. Then topped it with one. These cookies came out awesome!They are like Rocky Road truffles when made this way. These are pretty yummy cookies. I used the recommended 1/2 cup white and 1/2 cup brown sugar. I also added about a half a package of instant chocolate pudding to ensure that they would be nice and chewy. I rolled the dough into balls around a mini marshmallow and baked them that way. When they came out of the oven I immediately topped them with a marshmallow, which melted nicely.
