Chocolate, Apple and Walnut Cake
This chocolate, apple and walnut cake is a great Christmas alternative to the plum pudding being easier to make and tastes just as good.
Ingredients

- 2/3 cup sultanas
- 3/4 cup (90g) plain flour
- 3/4 cup (90g) wholemeal flour
- 2 teaspoons bicarbonate of soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/3 cup cocoa
- 185g butter, softened
- 1 1/2 cups (345g) white sugar
- 3 eggs
- 2 cups stewed apples, or applesauce
- 1/2 cup coarsely chopped walnuts

- Soak sultanas in boiling water to cover for 5 minutes. Drain.
- Preheat oven to 180 degrees C. Grease and flour a 25cm ring tin.
- Sift together plain flour, wholemeal flour, bicarbonate of soda, salt, cinnamon, nutmeg and cocoa; set aside.
- In a large bowl cream the butter and sugar until light and fluffy. Beat in the eggs then the stewed apples.
- Beat the flour mixture into the apple mixture. Stir in the sultanas and walnuts. Turn batter into prepared cake tin.
- Bake in the preheated oven for 80 minutes or until a toothpick inserted into the centre of the cake comes out clean.
- Let cool in tin for 10 minutes then turn out onto a cake rack and cool completely. Chill in refrigerator.

This consistently gets rave reviews, even from people who would turn their nose up at any kind of fruitcake. It has a great taste and a nice texture, without being tough. I've served it with Creme Anglaise, and I've also soaked it in liquor and brought it to the table aflame in Christmas pudding tradition!
